Okay so Cesar salad is amazing but ssssooooo unhealthy! You know when you’re craving something and need to have it? That’s how I felt Sunday so I rumaged though my fridge and made my own Caesar salad!
- Kale or any type of lettuce or spinach
- green olives (or black)
- red onion
- 2 tbsp of Dijon Mustard
- 2 tbsp of Apple Cider Vinegar
- 1 tbsp of olive oil
- Vegan Parmesan (I used follow your heart)
- Roasted chickpeas
. Gather up your kale or whatever you want for the base of the bowl
. Toss in your cucumber, tomatoes, olives and red onion
. In a separate bowl add in your Dijon mustard, Apple Cider Vinegar and Olive Oil. Mix it up to your liking just make sure not to add to much oil
. Add your dressing to the bowl with your veggies
. Add in your vegan Parmesan and roasted chick peas
. Mix your salad coating your veggies then Enjoy!
