Peanut Butter Cold Ramen

Ingredients

. Ramen

. Squash

. Zucchini

. Spinach

. Mushrooms

. Cucumbers

. 2tbsp Peanut Butter

. 1 tbsp Soy Sauce

. 1tbsp Toasted Sesame Oil

. 2tbsp Water

. Red Pepper flakes

. Avocado Oil

Step 1

Heat up a pot of water until boil. While you’re waiting chop up your squash, zucchini and mushrooms.

Step 2

Heat up a pan of avocado oil and add in your veggies with salt and pepper

Step 3

When your water starts to boil add your ramen until its soft should take three minutes. Drain your ramen and put into your bowl or container.

Step 4

Add in your sauteed veggies, spinach and cucumbers

Step 5

For your sauce add in 2 tbsp of peanut butter, 1 tbsp of soy sauce, 1 tbsp of sesame oil and 2 tbsp of water into a small bowl or container and mix. If you’re bringing this for your work lunch add it to a small container with a lid.

Step 6

To eat right away add two ice cups or if you’re eating for lunch just put it in your fridge. You can also sprinkle some red pepper flakes for some kick but not necessary.
